Chicken Quesadilla

- 1 yellow pepper diced
- 1 small mango, peeled and diced
- 8 cherry tomatoes
- 3 spring onions chopped
- 1 lime, juice only
- Salt and peppes
- 4 tortillas
- 150g cheddar cheese grated
- 250g chicken, cooked
- 1 green or red pepper diced
- Handful of coriander leaves
- Sour cream and guacamole

Cooking Instructions
- For the salsa mix all the ingredients together in a bowl and season to taste with salt and pepper.
- For quesadillas, lay two tortillas out on a flat surface. Top each with cheese, followed by the chicken peppers and coriander. Place the remaining tortillas on top and press down gently.
- Heat a frying pan on a medium to hot heat and add one quesadilla at a time to the pan. Fry without any oil for 2-3 minutes on each side until tortilla is crisp and the cheese has melted, and the chicken heated through.
- To serve once cooked, spoon soured cream and guacamole on the side.
