All-In-One Paella with Chicken and Peppers

1 red onion chopped
2 red peppers, thinly sliced
2 garlic cloves, grated
4 chicken breasts
2 tbsp olive oil
250g paella rice
600ml hot chicken stock
1 lemon, juice only
Salt and pepper
Preheat oven to 180 degrees.
Once the onion, peppers, garlic and chicken are cut, throw into a roasting tin or a large casserole dish large enough to fit this all. Put in the oven to roast for 25 minutes.
After the 25 minutes is up, remove the tin from the oven and stir in the paella rice and hot chicken stock. Cover tightly with foil or a lid. Return the dish to the oven at 160 degrees and cook for a further hour until the rice is cooked through.
Once the paella is cooked, add a dash more of the hot chicken stock to adjust the texture you wish. Squeeze over the lemon juice, taste and adjust with salt and pepper.
