Your Body at Week 11

Feeling rather large and in charge this week? You will probably notice you are more bloated than usual. This is caused from the changes in your hormones and that is slowing down your digestive system. If you are finding this uncomfortable, make sure you are eating enough fibre and drinking enough water to help digest everything easier.

Your Baby At Week 11

This week, your baby’s muscular and nervous system are now responding to each other. This means they are able to make facial expressions, stretch and bend in weird and wonderful ways.

Sweet Potato With Homemade Beans and Feta

Ingredients

  • Medium sized sweet potato
  • Tinned chopped tomatoes
  • Pasteurized feta
  • A handful of rocket leaves
  • ½ garlic clove
  • 1tsp paprika
  • Freshly grounded pepper
  • Pinch of salt
  • 1 tbsp of balsamic vinegar
  • Small handful of basil leaves
  • 1 tsp of olive oil
  • 1 tsp of lemon juice

Cooking Instructions

    • Preheat oven to 200 degrees
    • Prick the sweet potato all over and place on a baking tray in the over for 45 minutes. Once timer has gone off, turn off the oven and leave the potato in the oven for further 15 minutes.
    • While the potatoes are baking, heat olive oil in a pan on a medium heat, then add the garlic and fry until soft
    • Then add the tinned tomatoes, paprika, salt and pepper to the pan. Cook for a few minutes before adding the beans
    • Cook for around 15 minutes then add the balsamic vinegar, stir and take off the heat.
    • Slice the potato until it is open and the flesh shows. Then spoon the beans over the top and add your feta on top with a drizzle of olive oil on top.
